These women sustained their households and advanced racial progress, with travelers rerouting trips to buy their sought-after chicken. Freight’s fried chicken, inspired by this history, uses a dry batter similar to the 1800s recipe. Inspired by The Jerk Shack’s acclaim, this dish honors these women’s ingenuity, resilience, and community impact.
